Uncooked fudge

1 8 oz cream cheese softened
4 c powdered sugar
4 oz unsweetened chocolate, melted
1 tsp vanilla
dash of salt
nuts optional

Place cream cheese in bowl and slowly add the powdered sugar while mixing. then add the melted chocolate and stir well. Then add vanilla and nuts. Great a 8x8 pan and press into the pan using spatula, chill until firm and cut into squares

Microwave Fudge

14 oz semi sweet chocolate chips
1 cube butter
1 can sweetened condensed milk
1 C chopped nuts optional

Put the first three ingredients into glass bowl and microwave for 3 minutes. Mix well, add nuts and our into greased or waxed lined 8x8 pan. Peanut butter chips may be substituted for the chocolate chips. Or you can make two batches and pour the peanut butter batch over the chocolate batch when it is cool

Snickerdoodles

1 c shortning
1 1/2 c sugar
2 eggs
2 2/4 c flour
2 t cream of tartar
1 t soda
1/2 t salt

Beat shortning and sugars then add dry ingredients. Form into balls and roll in mixture of sugar and cinnamon. Bake at 350 8-10 min

Mom's Candy Cane Popcorn

4 quarts of popped corn
2 c whole nuts, your choice
3 c mini marshmallows
1 1/2 c gum drops, cut up if they are large
1 C butter
1 1/3 c sugar
1/2 c light karo syrup
1 tsp vanilla

Mix first four ingredients in a large bowl.
Put butter, sugar and syrup in pan and bring to a boil and simmer for 3 minutes, then add the vanilla and pour over the popcorn. You can shape it into a shape or just eat from the bowl...best when warm and fresh!

Banana Split Brownie

1 pkg 9x13 brownie mix (plus ingredients to make mix)
1 pkg 8oz cream cheese softened
1 can 8oz crushed pineapple
2 T sugar
2 bananas sliced
1 c strawberries, sliced
1/2 c nuts chopped
1/4 c chocolate topping

Prepare brownie mix according to package directions, bake as directed and cool.
Mix cream cheese, pineapple and sugar until blended. Spread over the brownies. Arrange fruit on top of cream cheese and drizzle chocolate over the top. Refridgerate until served.

Roz's Cashew and Macadamia Chews

In a pot combine:
3/4 c chopped macadamias
3/4 c chopped cashews
1/2 C butter
2 tbs. Karo syrup
1/2 c sugar

Simmer till golden brown about 10-15 min. Line a 9x9 square dish with foil, butter the foil.
Spread 1 bag milk chocolate chips on bottom of a dish. Pour macadamia and cashew mixture over chocolate chips and smoot around until all chocolate is covered. Let cool then put in refridgerator to harden for 1 hour

Maori Bread

2 pkg yeast
3 C warm water
6 T sugar
2 tsp salt
10 C flour

Soften yeast in water. Stir in sugar, then add 3 C flour and salt. Cover and let rise in warm place till doubled

K that is all the recipe says....I assume you add the rest of the flour and kneed till good consistancy, divide into three loaves and bake 1 hr at 375

Grandma Roundy's Cinnamon Rolls

2 T yeast
1 T sugar
1 C lukewarm water

Mix together and let stand

1 C milk
6 T butter
1/2 c sugar

Scald and cool

Add 3 beaten eggs
1 T salt

Add liquid mixtures and 6 C flour. Kneed and rise till doubled, about 2 hrs.
Roll out 1/4 inch thick, brush on butter, br sugar, cinnamon, nutmeg. Raisens and nuts are optional. Roll up like a jelly roll and cut. Dental floss works great. Let rise for 1 hour and bake for 20 min at 400.

CHOCOHOTOPOTS

This is like a lava cake.....

1 stick + 1 TBL real butter
4 ounces Bakers semisweet chocolate
2 eggs
3/4 C superfine sugar (regular sugar is ok)
3 TBL flour
1/4 tsp mint extract (optional, only if you like mint and chocolate)

4 (2/3/ to 1 C capacity) ramekins OR 2 (2C capacity) ramekins (baking dish)
In Microwave or over a double boiler melt the chocolate and the butter(Use the extra 1TBL of butter to butter the ramekins

Melt it slowly 30 seconds at a time to it wont burn
In another bowl, mix the eggs, sugar, and flour with a hand whisk. Beat in the cooled chocolate mixture. Divide the mixtures between the buttered ramekins. Bake for 20 minutes at 400 degrees. Do not over bake. They are done when the top begins to crack, underneath will be gooey. Eat directly out of ramekin or invert on a plate. Can be served warm and its really great with vanilla ice cream and/or strawberries, raspberries. Very rich, yummy treat!

Freezer Cookies

Makes 24 dozen!

4 c brown sugar
4 c white sugar
4 c shortning
8 lr eggs
8 c flour
8 c oats
4 tsp salt
4 tsp soda
4 tsp baking powerd
4 tsp vanilla

Cream sugars and eggs and then add dr ingredients. Divide dough into 4 parts and add to each different things: 2 c coconut and 1 c pecans, or 1 c walnuts, 1 c chocolate chips, or butterschotch chips or raisins and nuts. Or any other combination you may like. Shape into long rolls and wrap tightly in foil. Store in freezer and when you want cookies, you cut into slices and your ready to eat! Or just eat the dough frozen.....Bake at 350 8 min or so....don't over bake

Carrot Cookies

1 c shortning or butter
3/4 c sugar
1 egg beaten
1 c grated carrots
1 tsp grated orange rind
2 c flour
2 tsp baking powder
1/4 tsp salt
Cream butter, and sugar, add eff then carrots, orange rind. Add sifted dry ingredients. Drop by teasponful on cookie sheet and back 400 for 10 minutes.

Frosting
Grated orange peal, 1 tsp melted butter, 1/8 c OJ. Mix well and add powered suge enough to spread well.

Sausage skillet supper

1 lb Hillshire farm sausage, cut in chunks
Combine with 3/4 c convereted rice
1 c cr of celery soup
3/4 cup water
1 T butter in large skillet on medium heat. Cover and bring to a boil. Recuce heat and simmer 5 minutes. Stir in 1 pkg frozen peas and 1 can slices mushrooms, drained. Sprinkle with 1 c grated swiss ceese. Simmer until rice is fully cooked. 4 servings

Chicken Enchiladas

4 chicken breasts cooked and cubed/shredded
1 small can diced green chilies
1 sm onion
1 can cream chicken
1 can cr of mushroom
1/2 pint sour cream
grated chedder cheese
flour tortillas 12 or so

Mix ingredients together leaving a little grated cheese and soup mixture aside to put on top. Put small amount into each tortilla and wrap up, lining up in cake pan. Spread left over soup and cheese on top and back till bubbly 350 for about hour

Knorr Spinach Dip

1 10 oz pkg frozen shopped spinach, thawed, do not use fresh
1 1/2 c sour cream
1 c mayo
1 4 oz pkg Knorr vegetable soup mix
1 8oz can water chestnuts, finely chopped
3 green onions finely chopped
loaf of pumpernickle bread - or substitute

Squeeze spinach until much moisture is out, you can even rinse it. In bowl, stir together spinach, sour cream and soup mix. Add finely chopped water chestnuts and green onions. cover and refrigerate 2 hours or overnight. cut a slice from top of the round loaf of bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size peices. Butter insice of bread shell and fill loaf with dip and place on platter, surround with briend pieces and a variety of raw vegetables. And when its all gone and the company has left you can still eat the inside of the bread bowl that has soaked in the dip!

Puppy Chow

9 c chex cereal, any variety
1 pkg 6 oz concolate chips -1 cup
1/2 c peanut butter
1/4 c margarine or butter, do not use spread tub stuff...
1 tsp vanilla
1 1/2 c powdered sugar

Measure cereal into large bowl, set aside. Microwave Chocolate chips peanut butter and margarine uncovered for 1 minute, stir and microwave again for 30 sec until it can be stirred smooth. Stir in vanilla, pour chocolate mix over cereal in large bowl, stirring until evenly coated.
Pour into large plastic bag and pour powdered sugar in. Seal bag and shake till well coated. Spread on wax paper to cool and store in air tight container

Italian Chicken

Chicken - any parts that equal about two chickens
2 T melted butter
1 pkg dry italian salad dressing
1 c cr of mushroom soup
8 oz cream cheese
1/2 c milk
1 whole onion diced

Put Chicken in crock put and pour melted butter over top. Sprinkle italian dressing on top. Cook for 8 hours oh high. 1.2 hour before serving combine and cook in a pan over the stove the other ingredients and then pour over the chicken. Cook for another half hour and serve over potatoes or rice.

Crock Pot Ham and Potatoes

6-8 pieces pre cooked ham, cubed or thinly sliced
8 potatoes peeled and sliced thin
1 onion sliced
1 c grated cheese
1 can cr of mushroom soup

Toss sliced potatoes in 1/2 tsp cream of tarter and one cup water. Drain. Put half of ham, potatoes and oinion in corck pot. Sprinkle with cheese, repeat with remaining half. Pour undiluted soup over the top and cook on high for 4 hours or until done

Chuck Wagon Wings/ribs

3 lbs meat chicken, chuck, ribs etc
1 c chunky picante sauce
2/3 c brown sugar
1/4 c frozen OJ
3T minced onion
1/4 t garlic salt

Mix sauce together and pour over meat in crock pot

Mom's Chili sauce

4 quarts chopped tomatoes
1 quart chopped onions
1 1/2 quarts chopped apples
2 chopped green peppers
2/3 quart vinegar
2 1/2 c sugar
1 1/2 c brown sugar
1 tsp cinnamon and nutmeg
1/2 pkg whole spice tied in rag
red pepper and salt to tase.

Boil 4 hours and then bottle

Cheesy Chicken casserole

1/2 C Miracle whip
1 1/2 c shredded cheese
1 1/2 Chopped cooked chicken
1 1/2 c cooked, drained rotini pasta
2 c frozen vegetables
1/4 c milk
1/2 tsp basil leaves

Mix all ingredients except 1/2 c cheese and pour into casserold dish. Sprinkle the rest of cheese on the top and bake at 350 for 30 min 6 servings

Peanut Butter Rice Krispies

1 C Karo
1 C sugar

Bring to a boil and add 1 c peanut butter. When melted, remove pan from heat. Add 5 to 6 cups of rice krispies and press into a 9x13 buttered pan.

Topping:

Melt equal parts butterscotch and chocolate chips in the microwave then drizzle over the top

Mom's quick orange rolls

3 cans prepared biscuits, pillsbury or ballards
1 cube butter
1 c sugar
2 lrg TBLS concentrated orange juice
1 TBL grated orange rind

Grease bundt pan. dip rolls one at a time im the mixture of butter, sugar, oj, and rind. Stand on endge in greased pan and keep adding until all 30 biscuits and in ring. Pour remaining mixture over the biscuits. Bake 45 min at 325-350 until golden brown, make sure they are cooked down inside. Invert onto a plate.

Frog Eye Salad

1/2 t salt
1 TBL oil
1/2 c acini de pepe
1 can pineapple, any kind
1 can mandarin oranges
1 c mini marshmellows
1/2 c coconut
8 oz cool lwhip
1 pkg instant vanilla pudding
1 3/4 c milk

Boil Acini de pepe in water salt and oil. Cook for ten minutes, drain noodles, rinse with cold water. Open cans and drain off juice well. Make pudding using the 1 3/4 c milk. Mix all ingredients together and keep in the fridge.

Wild Rice Salad

6 oz pkg, Uncle Bens long granin and wild rice with herbs and seasonings
Cook rice according to pkg directions
Add:
2 1/2 c cooked cubed chicken
2/3 c mayo
1/3 c milk
1/3 c lemon juice
1 small onion minced
1 can water chestnuts sliced

Refridgerate overnight

Just before serving fold in:

2 C green grapes
1 C whole cashews
1 Can pinneapple chunks (or fresh)

serve on bed of red leaf lettuce

Zucchini Brownies

2 C zucchini, peeled and shredded
2 C flour
1 C sugar
1 tsp. salt
1 1/2 tsp baking soda
1/2 c cocoa
1/2 c vegetable oil
2 tsp vanilla
1 tsp. baking powder
1 c chopped nuts

Mix zucchini, oil and vanilla, Mix dry ingredients together, and add to zucchini mixture. Do not beat. Add nuts if desired Bake at 350 for 30 minutes, batter is very thick.

Easy icing:
6 TBL cocoa
2 TBL butter
2 TBL shortning.

Combine 2C powdered sugar and 1/4 cup milk and 1/2 tsp vanillaBlend well and spread on brownies

No bake cheesecake

1 8oz pkg cream cheese
1 can Eagle brand condensed milk
1/3 c lemon juice

Beat cream cheese and milk together until smooth. Add lemon juice and mix well. Pour into graham cracker crust. Let set for several hours and top with cherries or blueberries

Pumpkin Cheesecake Bars

1 C flour
1/3 c brown sugar
5 Tbl. soft butter
1/2 c chopped nuts
3/4 c sugar
1 8oz cream cheese
1/2 c pumpkin
2 beaten eggs
1 1/2 tsp cinnamon
1 tsp allspice
1 tsp vanilla

Combine flour and brown sugar in bowl. Cut in butter to make a crumb mixture, stir in nuts. Set aside 3/4 c for the topping. Press the rest into bottom of 8x8 pan. Bake for 15 minutes at 350. Combine cream cheese, sugar, pumpkin, eggs cinnamon, and vanilla in a larg ebowl. Blend until smooth. Pour over baked crust. sprinkle with rest of topping. Bake for another 30-35 minutes at 350, cool before cutting. Double the recipe and use a 9x13 pan and bake for 45 min

3 Minute fudge

2 pkg milk chocolate chips
11 1/2 oz
3 T margarine
1 can eagle brand condensed milk

Microwave on high for 3 minutes, stir until glossy. Add 1 Tbl vanilla and nuts and place in a buttered 9 x 13 pan. Place in freezer for about 1 hour for a quick set up, then into the fridge

Peppermint layered candy

Melt 1 pkg white chocolate chips of good white chocolate.
On the back of a foiled cookie sheet, sprinkle with crushed peppermint candies. Then spread a layer of white chocolate.
Melt 6 pz of semi-sweet chocolate with 6 T whipping cream and 3/4 t peppermint. spread over white chocolate. Then another layer of white chocolate topped with more candies. Cut into triangles.

Easy marshmallows layer bars

1 pkg chocolate or yellow cake mix
1/4 c melted margarine
1/4 c water
1 c M&M's
1/2 c chopped peanuts
3 c mini marshmellows

Mix cake mix, marg and water till blended. Pat into greased 9x13. Bake 20-22 min at 375.
Layer marshmallows, candies, and peanuts over crust. Bake 2-3 min or till marshmallows begin to melt
cool and cut into bars

Pesto Sauce

1 pkg fresh basil
1/3 pine nuts or walnuts
2 cloves of garlic (I use more)
1/3 c olive oil
1/2 C parmesean
3/4 lb pasta

Cook pasta accounding to package directions while making the pesto.
Place in food processor and process until finely chopped:
Basil (leaves only), nuts, and garlic
With machine running, pour in olive oil in a thin stream, slowly
add cheese, and a bit of salt and pepper
Thin with 2 Tbl hot water
Toss pesto with hot pasta

Lemon Fluff Dessert

1- 6 oz pkg lemon jello
3 c boiling water
1 pinch of salt
1 1/2 C sugar
1 t. lemon extract
lemon zest and juice of one lemon
1 can evaporated milk (highly chilled)

Mix everything but the evaporated milk together and chill mixture in the fridge until syrupy.While setting up make the crust by mixing
1/4 c sugar
1 stick of melted butter
26 squares of crushed graham crackers
press into 9x13 pan and cook for 10 mins at 375--(or buy 2 ready made crusts!)

In seperate bowl whip the evaporated milk with beaters until fluffy like whipped cream. Fold lemon mixture in and pour over crust. Refridgerate for four house and garnish with spearmint leaves. A very light cool summery dessert

Lime Chicken Enchiladas

About 4 chicken breasts, boil and shred then marinate in the following sauce:
6 T honey
6 T lime juice
1 T Chile pepper

While that is marinating grate 8 oz jack cheese (can use half jack, half pepper jack)Take a large can of green enchilada sauce and pour about half the can into the bottom of an 8x8 dish. Save the rest for later. Dip each flour tortilla in the enchilada sauce before filling with the chicken and also sprinkle some cheese on each one, roll up and put in dish.
When they are all filled, combine leftover marinade, 1 cup heavy cream and remaining enchilada sauce and pour over the top then sprinkle with any remaining cheese,
bake at 350 until cheese is melted and warmed through.
I would double the recipe for family size.
